Agar vs Konjac: Seaweed Gel Versus Root Gel

Agar-agar and konjac both set liquids into jelly. Agar is a red-seaweed polysaccharide. Konjac is glucomannan from an East Asian corm. They are not interchangeable thickeners.

Agar-agar is not konjac. Agar is a gelling polysaccharide extracted from red seaweeds, used in East and Southeast Asian sweets and in laboratories. Konjac is glucomannan from the corm of Amorphophallus konjac, set with alkali into Japanese konnyaku and shirataki. Both can replace gelatin for vegetarian gels. They are not 1:1 substitutes by weight or texture.

The history behind it

Agar (agar-agar) is extracted from red algae and has a long role in Japanese and wider East Asian sweets, as well as in microbiology as a culture medium after late-nineteenth-century laboratory adoption [2][3]. It melts when hot and sets into a relatively brittle gel as it cools.

Konjac glucomannan is processed from an East Asian aroid corm into konnyaku cakes and shirataki noodles, traditionally with slaked lime as a coagulant [2][4]. The chew is springy, almost rubbery, not a clean break like agar jelly.

Gelatin, by contrast, is animal collagen. Vegetarian labels often reach for agar or konjac without saying they are different plants.

Why it matters
